Is A handling even the number I'd be worried about in this case? I've heard that the stock v2.0 mini-x ESC handles 8A, but I'm not sure if that was continuous or peak.

Hi,
I'm using the Mini-X ESC v2.0 in the HOR and in the M18, with 6x2/3A cells & 300 or 280BB motor.
Never had a problem with FET (stock one, no extra added) !
In my M18 with the stock HOR motor (a 200 motor), due to a high gear, the motor get extremly hot ... but my ESC has no problem.
The Stock mini-x ESC is quite capable .
Remeber that in the stock connections, you just have forward and reverse ... if you switch fast from full forward to full reverse (or vice-versa), you could easily burn out any motor !
In case you want to have forward + brake (loosing the reverse, my set-up in the HOR), just plug the battery plus to the motor plus & the ESC, and plut the ground of the ESC motor to the motor ... in this way you have a brake and even more powerful ESC (you just cross 1 FET instead of 2 FET ...)
Have fun.

P.S: My stock Mini-X has so poor performance (just Neo Magnet added, and the stock 6 cell pack) ... that I have gone from 4WD to FWD ... the car now handle better and with more top speed !
Also FWD look like it is more heasy to handle then 4WD ... my 4WD was doing a lot of unwanted 360 deg turns !
