As you said, each channel has one "+", "-" and "Signal" contact. It doesn't matter wich "+" and "-" you choose. For the power supply of the reciever and all channels it's enough to connect just one channel to the battery. It's even recommended because of interference problems. The guys here in germany have a special solution for that. Have a look in ths thread

It depends if you have also light in your truck. My 150mA cell is enough for about 15 to 20 minutes of driving with lights on.
